Sweet Bliss…

One day my father and I were talking about how we miss the Philippines, especially the food, and then he asked me  if i know how to make Brazo de Mercedes… Well, i know how to make “Canonigo”, which is similar with the white part of the brazo, but i have never really ever tried, making the whole brazo de meredes, so this was really my first time, so i decided to make one„ cause it’s also one of my favorite desserts…=) then here it is..=)

Here’s my Recipe,

RECIPE…

8 egg whites
pinch of Cream of tartar
1 Cup sugar
pinch Lemon Rind

Procedure:

1. preaheat oven 130℃ | 250℉
2. Grease a 9 x 13, then line with wax paper, then grease again and dust with flour. set aside.
3. Beat the Egg whites with the cream of tar until soft peak, then add the lemon rind and the white sugar gradually, beat until stiff peak but not dry. Pour on the prepared pan…
4. bake for 25 to 30 mins or until set…
5. dust a clean wax paper with confectioner’s sugar… invert here the baked meringue


FOR THE FILLING:

8 egg yolks
3/4 of the 225 ml can condensed milk..
Vanilla extract
pinch of Lemon RInd


Procedure…

1. Mix everything, and cook in a double boiler, just mix until piping consistency…
2. pipe in the middle of the meringue then roll the meringue… then that’s it!

In a few hours i will become a computer controlled human….

Actually the title is too exaggerated. hehe. In a few hours, i would have a surgery cause they will put an ICD (implantable cardioverter-pacemaker, sounds robotic huh..=)) well, it’s like those iron like things that they use on dying patients when they’re trying to revive them, only smaller and inside me with three lead wires connected in my hear and yeah, I’m kind of having mixed emotions, I’m nervous with the whole thing, me being half awake during the procedure and i don’t want scarssss! haha and also Im kinda excited  with the thought that there’s a machine inside me, and I need to always bring this card whenever entering a secured place like airports cause i would still bring the alarm on even if I am naked. Sounds cool huh?! hehe! well i just hope that everything will be fine.. and yeah guys pray for me for fast recovery! thanks!=)

Missing Charlie…

It’s been 2 months since i have this craving for yellow cab, (four cheese, extra cheese, pepperoni, italian sausage) YUM! and also the charlie chan pasta which i must say one of my favorite pasta..

I decided to try to search the recipe.. and found a lot of version and choose one which i think would be the most similar depending on the ingredients (Im an HRM student, that’s why Im not that amateur in cooking, Hehehe) then base on the ingredients i thought that it needs some adjustments, a little more of this and that, and this is what I came up. My own version of the Charlie Chan pasta… and i must say, without sounding like bragging, it’s almost there, need a little more adjustments with the color ( have to brown the chicken more) and the taste, and this is the adjusted recipe which probably will taste more similar with yellow cab’s charlie chan pasta,…

Yellow Cab’s Charlie Chan pasta

Prep Time: 30 mins.

Serving: 2-4 persons

2 tbsp. olive oil

2 tbsp. peanut oil

1  whole bulb of garlic, minced

1/2 white onion, brunoise

1 whole boneless chicken breast, cut into strips

5 pcs Shitake mushrooms

1 1/2 sesame oil

1 1/2 tbsp. Char Siu Sauce (chinese barbeque sauce)

1/2 teaspoon chili garlic sauce (put more if you want more spice)

5 tbsp. Oyster sauce

2 Tbsp sugar

1/4 cup peanut

150 g - 200 g spaghetti pasta (cooked)

salt and pepper to taste

Green Onions, cut into strips (optional, for garnish)

Procedure:

1. Mix the sesame oil, char siu sauce, oyster sauce and the sugar all together in a small bowl, set aside.

2. Put the peanut oil and the olive oil in the pan, then saute the the onion, and then the garlic until lightly brown, put the chicken breast and saute until brown.

3. Toss in the mushroom, cook for a few minutes.

4. Put the mixed sauce in to the pan and mix, cook for a few minutes.

5. Toss in the peanuts, and then the pasta.

6. Season with salt and pepper.

7. Garnish with green onions, serve hot.

This song is really awesome… but I admit, I am not a charice fan, and honestly this song really is a charice hit… the beat, the melody, (though the lyrics for me is not appropriate for her age) but still this song really needs props, doesn’t sound like one of trying hard filipina singers that is breaking in to US music industry, cause charice really owns the song… unlike the few songs she “released” or sang, like fingerprints and note to God, this song has a charice mark on it… though it  sounds like jordin spark-ish, for me, it’s still bravo for charice….

BTW, actually, the songs has just been “leaked” or “released” or whatever, last week i think… and covers are now spreading on you tube…  the last video is a fan without even a bit of filipino blood, something to be proud of as a filipino„, and this are some of the cover videos…

crossing the getting-used-to-it line…

There are just certain things in this world that you really doesn’t like… like maybe how your parents would never stop reminding you of things that you already know… or your annoying friend who keeps on telling you things about him that you are not really interested… or how messy your room is… or how rude the drivers nowadays, how much you want to be with your loved one…  the pimples growing everywhere on your face… too much money you are spending…  computers keep on hanging up…. the things that you never accomplish.. things that you keep on failing that you never wanted to try changing it anymore because your now get used to it… but how much pain can you endure, how much effort can you exert and how many more failures can you accept before you’ll tell yourself.. “it doesn’t matter any more… i just cross the getting-used-to-it line…”, and for some it could be a postive thing and it could also be a nightmare… for one simple reason… you just never want to give up… especially if it means a lot to you…

It’s a human nature to resist things they don’t like… and try changing this… you’ll never want to get used to being with annoying people… or you’ll never want to get used to spending too much, and definitely, you don’t want to get used to the traffic and with the drivers that are very rude or your parents reminders that gets you more frustrated that you just want to get used to it, and unconsciously just ignoring them, but what if suddenly it feels like everything is normal, the way people annoys you doesn’t seems so annoying at all… or you thought pimples is not bad at all… and suddenly things seems so fine to you that you don’t want to change you fucked up life because for you this seems normal… but how would you know if you just cross the getting-used-to-it line…  what would you do if suddenly, your fucked up life seems just normal for you… cause this is the world you just used to live in…

And that is the problem with us, we tend to ignore things that shouldn’t be ignored, because we want an easy way out, we want to tell and convince ourselves… “my life is not that bad at all…” but the truth is, it is… we just don’t want to face the problem because we don’t enough courage… that’s why we push ourselves on the verge of getting-used-to-it line so that everything would seem normal… but let me tell you… there is really no getting used to it… there’s really no getting-used-to-it line… there’s just coward people who makes coward decisions to have courage to survive in the coward world they live in..
